Simple and Healthy ChocolateTruffles Recipe by Dr. Libby

This Valentine's Day treat is too good for just once a year. It's high in magnesium, zinc, antioxidants and fiber. Enjoy!!


  • 1/3 cup cacao power
  • 1/2 cup shredded coconut (unsweetened)
  • 8 chopped dates (fresh preferred, or dried)
  • 1/4 cup raw pumpkin seeds
  • 1/4 cup sunflower seeds
  • 1/4 cup water
  • pinch salt

in a food processor, combine cacao powder and seeds. Add coconut and salt and pulse. Next add the dates and blend to dough, adding the water to smooth. Roll into balls and chill. They can be rolled in cacao nibs, chopped pistachio nuts, or crushed buckwheat cereal for a finishing touch. Enjoy!!
